Smoked Wagyu Tri Tip cooked Hot & Fast on my Gateway Drum Smokers. Seasoned with AP, let it sweat for 1 hour, seasoned with Hot Rub & Steak Rub and got it on a 325 smoker for about 1 hour. I flipped it every 15 minutes and hit it with a Balsamic Baste until it hit 128 internal.
